How to Make Veg Manchurian Gravy | Easy Vegetable Manchurian Recipe

To make Gravy Veg Manchurian, I have already chopped the vegetables here. So, I have taken one cup of cabbage here. Along with that, a little bit of capsicum (about half to three-quarters), and a little bit of spring onion. You can add carrot and capsicum to this Manchurian recipe, or you can make it using only cabbage.
So, first, we will take a mixing bowl and put this cabbage and spring onion in it. When you add salt to onion and cabbage, moisture is released, meaning water comes out. Because of this, we will first mix in the salt and leave it for five minutes. After that, we will squeeze out the water and then make the Manchurian balls.
So, five minutes have passed here. Look, the vegetables look a bit wet. Now, we will squeeze them in our fist like this to remove the water. Whenever you make Manchurian balls, add salt to the vegetables, leave for 5 minutes, and then squeeze out the water. This ensures your balls will remain firm and won’t break. Otherwise, if the water is released, you will have to use more cornflour or flour for binding. This will make the Manchurian balls heavier.
So here, I have squeezed out the water from the cabbage and onion. Look. Now we will proceed to the process of making the Manchurian balls.
So, we will take another bowl and put all these vegetables in it. After that, we will add a quarter cup of cornflour and add a little less all-purpose flour (maida). You can also add a little rice flour to it if you like; it makes the Manchurian balls a bit crispier. Add a quarter teaspoon of black pepper powder, half a teaspoon of red chili powder, and salt to taste.
So, I am adding half a teaspoon of salt here because we had added salt earlier. Mix all these. I am not using water to mix this because the moisture in the vegetables itself will bind it well. If the mixture isn’t coming together, you can add a little more cornflour or maida.
Now, let’s go to the process of making the balls. I have cleaned my hands and applied a little oil so that the mixture doesn’t stick to your hands. After that, take a little of the mixture and make balls like this. Shape them to whatever size Manchurian balls you want. Look. Make all the Manchurian balls like this and keep them aside. After that, we will fry them immediately. Remember to fry the Manchurian balls immediately after making them; otherwise, keep them in the fridge if you don’t want to fry them right away.
So here, I have made all the Manchurian balls. Now, let’s go to the process of frying them. For frying, I had kept the oil to heat earlier. The oil temperature should be medium. Don’t keep the flame high, otherwise, they will brown from the outside but remain raw inside. So, keep the gas flame on medium, and on medium flame, we will fry them until golden brown.
So, your first batch of Manchurian is fried. We will fry the remaining Manchurian in the same way.
So here, we have fried the Manchurian balls. Now, let’s move to the final process.
Heat 2-3 tablespoons of oil in a kadhai or wok. As soon as the oil is hot, we will add all these vegetables. So, we have taken 2 inches of ginger, 2 green chilies, 1 large onion (chopped), green capsicum, red capsicum, and 2 tablespoons of finely chopped garlic. Garlic is used generously in Manchurian.
As soon as the oil is hot, add these three: ginger, garlic, and green chili. And we will sauté them for half a minute. It’s good to cook ginger and garlic well. Now we will add all the remaining vegetables at once. Colorful capsicum looks good in it, so I used it. But if you don’t have it, you can use only green capsicum. We need to sauté the vegetables on high flame for a minute. We don’t need to cook the vegetables too much; they should retain their crunch.
So here, we have lightly fried the vegetables. Now we will lower the gas flame and then add all the sauces.
So, add one tablespoon of red chili sauce. We will add one tablespoon of green chili sauce to it. After that, we will add 1 tablespoon of tomato ketchup. Here, after the tomato ketchup, we will add a little less than half a teaspoon of vinegar. Add 1 tablespoon of soy sauce. I am using dark soy sauce here. Then we will add a little black pepper powder, half a teaspoon of red chili powder, and salt to taste. Remember, all the sauces contain salt, plus we added salt to the Manchurian balls as well, so be careful with the salt. You can add less and check the taste later before turning off the gas.
After that, we have mixed all this. Now we will take 2 tablespoons of cornflour and mix it with water to make a smooth slurry. Look, there should be no lumps. This cornflour slurry will thicken the gravy. So here, I have made the slurry and kept it aside.
Now, what we will do is, we will not add the entire slurry at once. Add it little by little because we need to adjust the thickness of the gravy as needed. After adding the cornflour, I have added about one cup of water here, and after that, mixed it like this. Since we are making gravy Manchurian, we will use more water. So, I have added the remaining slurry and mixed it. Now we will wait for it to come to a boil. As it comes to a boil, it will start to thicken. A special property of cornflour is that it thickens the gravy. So if your gravy becomes too thick, you can add a little more water and cook it more.
As it comes to a boil, its color will become darker. Look. So if you want the gravy even thicker, you can let it cook a little more. Now, add the fried Manchurian balls. So here, we are making gravy Manchurian, so we will put them in the gravy. If you want to make dry Manchurian, use about 1 tablespoon of the cornflour slurry and use less water.
After adding the Manchurian balls, we will cook it like this until it comes to a boil, and then serve it immediately.
